PB Cup Cookies

Remember a few months ago when I introduced you to UnReal Unjunked candy coated chocolates?  Well, at the time, I purchased some other varieties of UnReal candy, some was used for trick or treators, and the rest has been sitting in my pantry.

This weekend, while pursuing pinterest, I found these cookies and knew they had to be made.

I found my first batch to be a little flat, so I made a few changes and have included the recipe below:

What you'll need:
 6 TBSP butter, softened
1/2 cup peanut butter
1/2 cup loose brown sugar
1/3 cup granulated sugar
1 egg
1 tsp vanilla
1/4 tsp salt
1 1/8 cup flour
1/2 tsp baking powder
9 PB cups, chopped

First, cream the butter, sugars and peanut butter until creamy. Add the egg and vanilla to combine.

Add the salt, baking powder and flour until combined.

Hand mix the PB cups.

Preheat your oven to 350 degrees and scoop out with a cookie scoop, or about a walnut sized ball. Then bake for 8 - 9 minutes. We like out cookies soft, so these may look a little underdone to some people at first, but they stayed soft even the next day cooking for 8 - 9 minutes, anything longer than that produced more of a crunchy type cookie.

  1. What?! And you didn't bring these cookies into work?! They sound yummy. I may have to try them this weekend. (It's almost 7:30. Are you surprised I am still awake?)

  2. Finally! I was able to add the pictures. . .You know, this recipe makes about half the amount of cookies would consider to be "typical", so by the time we eat some fresh out of the oven, there weren't many left to share. I kind of like the smaller amount though, it builds in some portion control that I don't have with baked goods :)
